Aam Panna || Raw Green Mango Panna || Green Mango Juice

Aam pana is an Indian drink renowned for its heat-resistant properties. It is made from raw mangoesand is yellow to very light green in color, and is consumed as a tasty and healthy beverage to fight against the intense Indian summer heat. In most instances, mint leaves are added which enhances the green colour.
Raw mango is a rich source of pectin, which gradually diminishes after the formation of the stone. Unripe mango is sour in taste because of the presence of oxaliccitric and malic acids.
Aam panna, which is prepared using raw mangoes, sugar and an assortment of spices, quenches thirst and prevents the excessive loss of sodium chloride and iron during summer due to excessive sweating.The drink is mainly consumed in north India and is considered beneficial in the treatment of gastrointestinal disorders. It is also a good source of vitamin B1 and B2niacin, and vitamin C. In Indian culture, it is regarded as a tonic believed to increase resistance against tuberculosisanemiacholera etc.
My way of beating this extra heat is by preparing nutritious coolers, dishes made from seasonal fruits such as mangoes, watermelons, grapes et al. These fruits help us in remaining hydrated, make our bodies cooler and even immune us from the scorching heat.

Ingredients

  • 2 big Green Mango
  • 2 teaspoon Roasted cumin seeds
  • 1 tablespoon salt
  • 1/2 teaspoon jeera powder
  • 6 tablespoon Sugar or Jaggery
  • 4 cups Water
  • A handful of Fresh Mint leaves


Instructions

  • Wash and clean mangoes.
  • Boil water in a pan, add mangoes and boil them for 30-40 minutes.
  • Or you can pressure cook them for 2-3 whistles until mangoes are soft and tender.
  • They will look like this, mangoes will loose their green color...
  • Assemble rest of the ingredients.
  • Cut open the mangoes..
  • Using a spoon, scoop out the pulp from boiled mangoes.
  • Discard the skin...
  • Allow the pulp to cool down completely.
  • Once cooled add all the spices to the pulp...
  • Add this to a blender and blend until smooth.
  • Panna is on a thick side. Add water to dilute and adjust seasonings.
  • Add ice and fresh mint leaves and serve cold. Stays fresh in the refrigerator for up to 2 weeks.
